Pheasant Recipes

To all that visit this site:
I am in search of pheasant recipes. I have 8 birds in the freezer already. Posession limit in IA is 12 so I am legal. I want your favorite ways of cooking/frying or whatever.

How about the very simple recipe of rolling breasts in flour, frying with salt and pepper - simple, but don't mistake simple for not tasty...it's simply delicious!

We also like to throw the legs into the crockpot with rice and a little of this and that for spices, chop up some onions and peppers and let it slow cook all day with some cream of onion/celery/mushroom soups - mmmm. Very good.

I like the Niemeyer cheese deal! The last time we served it over angel hair pasta- that was really good, you need that recipe?

Shannon's Best Damn Hunting Sandwich
-1/2 cup butter
-1/2 cup flour
-1/2 cup milk
-1 pd Velveeta cheese
-1 1/2 cup cream of mushroom soup
-1 1/2 quart (chicken, pheasant, turkey) -Remove dead bird from bones -Make white sauce (butter, flour, milk) -Add cheese (cut in pieces and melt) -Add soup, salt & cheese.
-Cook 10 minutes

White Bean & Pheasant Chili
-2 tablespoons butter
-1 cup sliced green onions
-3 tablespoons all purpose flour
-2 cups chicken broth
-3 1/2 (1lb) cut up cooked pheasant
-1 can (15oz) great northern beans, rinsed and drained
-1 can (11oz) corn with red and green peppers drained
-3/4 cup half and half
-1 can (4oz) chopped green chilies, undrained
-1 3/4 teaspoons ground cumin
-2 tablespoons fresh lime juice
-Mix all ingredients and simmer for 10 to 15 minutes.

Finally for full enjoyment add 20 glasses of German beer, 6 to 10 rounds of a German song and a boatload of bullshit.
